One of the things I’ve wanted to do this fall is make homemade pumpkin bread. I’ve never done it before, but I’m feeling very “holidayish” this year so I thought pumpkin bread would be a fun fall activity. I found a recipe online (that didn’t call for me actually buying a pumpkin….I figured I should probably start slow) and happily realized the only ingredient I had to buy was a can of pumpkin. The recipe was pretty easy. There were some comments online that changed the recipe a little that I might try next time, but I have to admit that the original turned out to be really tasty (especially for a first timer). This little project also made me realize that I need to put miniloaf pans on my Christmas list. I have 3 random sizes that are mom’s hand-me-downs, but if I had some small ones I could have made several little loaves to give away instead of 2 big loaves that I have to cut up to pass on. It was an easy and fun baking project that I can’t wait to tweak and make a tradition. 🙂
